Prosciutto Wrapped Tenderloin of Beef- Served with a Mushroom Madeira Demi Glace & Pommes Fondant

What does it really mean?
Such expression is a sales pitch… well … let’s see; Fast talking caterers are like used car salesmen…. the minute you would walk into the catering hall they are out to get your deposit money no matter what. The “We only host one wedding at a time” expression …..I believe is getting a little too old. “there will be no other bride(s) while you are here”, says the pushy sale person to the bride while she’s flipping through the pages of a leather-bound-decade old photo album; making the bride believing she’s the only one on premises while her dream  day is going on even thought the catering hall has 2-3 or 4 rooms that must be sold every time all the time. You might be the only bride in the premises but what about the other rooms? well…. there is a sweet sixteen going on, there is also a 50th birthday celebration happening as well as a fundraiser event … so guess what? There is a full house with all kinds of guests all over the place people coming and going…. but I was told there will be only one bride ME! I see a lot of people who are they? Your guest will always remembered the cocktail hour food display and the entertainment. These are perhaps the two most important elements of your wedding planning. (every element is important). When getting together with your caterer make sure there is a good variety and plenty of food, a least four to six different food stations plus a cold display and a least couple of hot chaffing dishes and don’t forget a good selection of passed around Hour O’Deuvers. The other aspect of your wedding would be your entertainment whether you had a D.J or a 10 piece band, entertainment is what’s going to keep your guests dancing and having a good time ! remember first impressions are important and what better opportunity to show off your hard work than the cocktail hour and the source of entertainment !!!!

Brides do your homework!


Congratulations if you recently got engaged, now is the time to start planning your wedding. However before you dive head first into such task, prepared yourself, ask a million questions, send countless e-mails, make tons of phone calls, meet with fast talking sales people and annoying owners, managers, vendors and other people involved in the industry….. do your homework !!! when hiring a vendor there are couple of steps you should take into consideration: how long had they been in business, easy  referral, easy access to the person in charge, (very important), price, able to check and speak to previous costumers (brides), gives you their most sincere advice, keeps you informed of new trends in the industry,  reliability, on time, fun to work with and best of all is an honest and sincere!. For every category there are literally thousands of vendors, choose wisely and do not sing up the first one come down the pike… lock in your location and date first, if you can not do the date, definitely do the location first, negotiate the date. while hiring vendors pick everyone’s brain, vendors know about other professionals in the industry they are a good source of information;
